mama's super simple granola
The only granola that I ever make is my mama’s recipe. I have memories from when I was 4 or 5 of us making this recipe together. It’s so special for that reason, but it’s also so delicious! It comes together in just a couple minutes on the stove and then bakes for just a bit, so this is perfect for making for breakfast, brunch, or an anytime snack!
INGREDIENTS
1/2 cup butter (for vegan: substitute coconut butter or coconut oil)
1/2 cup honey (for vegan: substitute maple syrup)
1/2 cup creamy peanut butter (for peanut allergy: substitute creamy almond butter)
4 1/2 cups old-fashioned oats
OPTIONAL ADD-INS
1/3 cup hemp hearts (this is my favorite addition and one I always throw in! so many nutritional benefits!)
1/4 cup chia seeds
1/3 cup ground flaxseed
1 tsp vanilla (this is another favorite of mine!)
chopped pecans or walnuts
chocolate chips
DIRECTIONS
Combine butter, honey, and peanut butter in a medium pot on the stove. Melt together over medium heat, stirring often. Once it reaches a gentle boil, stir continuously and turn off the heat. Add in the oats and any add-ins you choose. Stir together and then pour into a baking dish. Bake on 225 Fahrenheit for 20-25 minutes. If you like your granola crunchy rather than soft, bake for 35 minutes or until desired texture.
Truly this is the best granola! We eat it on it’s own as a snack or breakfast frequently. It pairs so well with fruit and yogurt too though!
