easy jammy raspberry tarts

These jammy raspberry tarts are sooooo easy and perfect for Valentine’s Day! We whipped these up this afternoon and have all been eating them all afternoon!


INGREDIENTS

RASBPERRY JAM

  • 8oz frozen red raspberries 

  • 1/3 cup cane sugar

  • 3 tbsp corn starch

  • 2 drops lemon vitality essential oil (or 1 tsp fresh squeezed lemon juice)


DOUGH

  • 2 1/2 cups + 2tbsp all-purpose, unbleached flour

  • 2 tbsp cane sugar

  • 18 tbsp salted butter

  • 1/2 cup ice cold water

INSTRUCTIONS

To make the raspberry jam, dump all of the ingredients in a medium pot and cook on medium-low heat until raspberries have thawed and the corn starch taste is cooked out. It took about 20 minutes on my stove. Remove from heat and let sit for a bit to fully thicken. This jam is very thick, which is what you want - you do not want the jam running all over your baking sheet.

To make the dough, I use a food processor and it comes together in about 60 seconds. I have been using this recipe for pie crust, tarts, quiche - pretty much everything for 7 years now and it has never once failed me. If you don’t have a food processor, just mix the butter in very, very well by hand.

In the food processor, pulse the flour and sugar together a couple of times until combined. Then add in your cubed, very cold butter. Salted butter is key here - if you are not using salted butter for some reason, make sure you add in at least a tsp of finely ground Himalayan salt to compensate. Blend until the butter is fully mixed in. Add in 1/2 cup of ice cold water. Blend until the dough has formed a ball that is spinning in your food processor. Remove and pour out onto a lightly floured surface. Roll out to about 1/4 in thick and cut into whatever your desired shapes are.

Fill with jam and decorate as desired. Place on a parchment covered baking sheet, and sprinkle lightly with cane sugar. Bake in a 350 degree oven for about 15 minutes or until lightly golden.

Remove from the pan to prevent them from cooking further, let cool a bit, and enjoy!
